Indi Gavi DOCG del Comune di Gavi
The name INDI stands for indigenous yeasts, but it is also a tribute to Indie music, independent of mass culture.
Spontaneous fermentation from indigenous yeasts, for a Gavi born in Monterotondo, from a vineyard on mixed soil. The flagship label of our sustainable viticulture expresses the wonderful richness of our land, without sacrificing the olfactory elegance typical of our wines thanks to a fermentation obtained from a pied de cuve.

Vinification and aging
More than three years of research and trials to create a wine that would combine the sensory richness of spontaneous fermentation with the olfactory cleanliness typical of our wines.
The first vinifications, with maceration on the skins of the whole mass, resulted in oxidative musts, with little typicity and sense of belonging.
Francesca, in 2015, cracked the code: we use a pied de cuve, selecting a percentage of the grapes harvested in Indi’s vineyard, de-stemmed and placed in open containers. Meanwhile, the remaining grapes are pressed and the must is kept in refrigerated tanks to inhibit fermentation.
After about 72 hours of maceration on the skins, the destemmed grapes begin to ferment. This indigenous yeast-rich must is combined with the must in the tank as a fermentation starter, a process similar to sourdough starter in baking.
